The spring/summer salad I’m currently obsessed with
All hail Youtube University! I’ve definitely replicated a recipe or two from Youtube, but this one might be my favourite yet.
I put my own spin on Pick Up Limes Sweet Potato Kale Salad, using Plantain instead of sweet potato and it eatssss (figuratively and literally).
Chopped plantain, red onion, tomato, chickpeas and garlic seasoned in olive oil, all purpose seasoning, chilli powder, paprika and salt and pepper before roasting in the oven.
This is one of those salads that you can have on it’s own as the toppings are enough to fill you up or you can have it on the side with some grilled fish or chicken.
You can follow her recipe in the video tagged below as I followed it bar one or two ingredients. Massaging the kale in olive oil really makes a huge difference to your eating experience, then drizzled in a sweet but sour mint dressing really ups the ante. I also added in Spinach leaves for extra iron.
